THANKSGIVING IN MEXICO – San Luis Potosi

Nov 19-26, 2016

Situated just south of the United States, colonial architecture and adobe villages define the colorful nation of Mexico. Amidst the scenic landscapes and rural communities that populate central Mexico, grateful villagers greet our expeditions with joyful smiles and warm embraces.


DAY 1: Saturday USAàGuanajuato, Mexico

  • *participants must arrive to Del Bajío International Airport (BJX) before 2:00PM on DAY 1.

  • Group transportation will be provided from the airport to the neighboring Guanajuato (30 min). Upon arrival to the provincial capital, participants will check-in to a downtown hotel for overnight accommodations. Leisure time available to relax and explore the local surroundings. Nestled in the central highlands of Mexico, this UNESCO World Heritage Site was founded in 1554 during the Spanish conquests. Known for its rich silver mines and colorful colonial architecture, Guanajuato is also distinguished for its unique underground tunnels once used to channel the Guanajuato River below this provincial capital.

  • Official expedition activities will begin this evening. Group orientation will be scheduled for participants to discuss trip details with local CHOICE staff. Dinner will be served.


DAY 2: Sunday GuanajuatoàCHOICE Mexico CenteràSan Luis Potosi Community

  • Breakfast served at hotel. Group bus transportation will be provided to the CHOICE Mexico Center located in neighboring Irapuato (45 min). Here participants will learn about aquaponics technology by exploring demo installations and learning about the construction design, process, and goals. The team will also be briefed on the expedition community and history.

    Lunch will be served.

  • After lunch, the group will travel to the outskirts of San Luis Potosi (1-hour distance). Participants will arrive to a gracious 

    village and be greeted with a warm welcome from native villagers. Time provided to unpack, rest, and meet local villagers. Dinner will be served in the evening. Overnight accommodations provided inside the village church and/or schoolhouse.

DAY 3: Monday – DAY 6: Thursday San Luis Potosi Community

  • Breakfast served in village. Aquaponics project scheduled throughout the week (along with other village-identified initiatives). Lunch will be served in the afternoons with a brief rest provided. Dinner will be served in the evenings. Village activities and interactions will be provided to promote powerful intercultural exchanges between participants and native villagers. Overnight accommodations provided inside the village church and/or schoolhouse. Thanksgiving dinner and village farewell/celebration on Thursday evening.


DAY 7: Friday San Luis Potosi CommunityàGuanajuato

  • Breakfast served in village. Gracious village farewell scheduled before departure. Group transportation will be provided to Guanajuato (2-hour distance) for overnight accommodations (shared Double Rooms). Site seeing will be followed by dinner in the evening to conclude the expedition and discuss overall experiences.


DAY 8: Saturday Mexico to USA

  • Breakfast served at hotel. Personal time provided to explore Guanajuato through shopping, hiking, and leisurely stops to its countless café’s restaurants, and tiendas before your departure flight.

  • *transportation will be provided to Del Bajío International Airport (BJX)) for international flight departures. Later afternoon departures are recommended.
